Our ancestors were very close to the nature. They observed the nature and figured out most of the things about the nature itself and also about human beings. Most of the theories of psychology and psychoanalysis are inspired by such observations. The people you call scientists are avid readers of philosophy, theology and other such subjects.
So in Hindu philosophy, why is Ganesh a symbol of an energy that removes obstacles from one's path. You will find the answer very interesting. Here it is:
See, in Jungle, there are elephant corridors. Elephant corridors are the passages which gets created when a herd of elephants move along a path in the Jungle. Most of the debris, branches and other things get removed from the path where this herd of elephants tread. This corridor is used by other animals and even the forest dwelling humans to tread the forest.

So essentially the elephants remove the obstacles and create a smooth pathway for others to follow. This is how Ganesh as a symbol of energy must have emerged. The energy that removes obstacles from the pathway that come up in the pursuit of human endeavors.
The hymn dedicated to the Lord Ganesh also emphasizes on him being the "Remover of Obstacles".
|| ॐ वक्रतुण्ड महाकाय कोटि सूर्य समप्रभ निर्विघ्नं कुरुमे देव सर्व कार्येषु सर्वदा ||
Meaning: "I address the lord who has a huge body and has a curved trunk, whose radiance is equivalent to hundred million Suns; I request my lord to remove all obstacles from all of our endeavors always."
